Technically ridiculous. The pacing and the room mattered as much as the food.
A tasting menu that earns its length. What stuck with me wasn't any single dish. It was the choreography: the way each course reset your palate and your attention, the deliberate silence between plates, the room engineered so the table felt like the only one there.
The food was modernist Indian and technically absurd in the best way, but I keep coming back to the pacing, the room, and the restraint.
