Technically ridiculous. The pacing and the room mattered as much as the food.

A tasting menu that earns its length. What stuck with me wasn't any single dish. It was the choreography: the way each course reset your palate and your attention, the deliberate silence between plates, the room engineered so the table felt like the only one there.

The food was modernist Indian, technically absurd in the best way, but the thing I keep coming back to is that the experience was the product. The cooking was necessary but not sufficient. Pacing, room, and restraint did the rest. A useful reminder that in almost everything, the system around the core artifact is what people actually remember.
